you have to use ESP32 and forget about wemos and Mega2560 you can attach modbus interface to the ESP32 as well for HMI , you can go for Nextion HMI screen, It talks to the ESP over UART there are various sizes out there you can pick one and for the MQTT broker, we can go for Ubidots, I will build the app to let you control and monitor the ESP32 both the app and the ESP32 link over the MQTT broker
