Basic physical mail handling - receive, sort, print and post.

I am going away from my business for a while, but have a few projects outstanding. I need someone to do some basic mail handling to help me finish them.
Duties are:
1. to receive and sort incoming mail. (exact details tbd)
2. Scan and email project related mail to me. (keep the original, I will pick them up when I return)
3. I will return my reply in pdf format via email. This will need to be printed and posted, possibly including other documents (that I will provide to you).
I can provide all stationay and stamps, and will provide a file and instructions for each active project.
I'm happy to pay hourly, or a fee per letter. I'm guessing that there will only be 1-2 letters per week, but it may be several weeks before all projects are completed. As there may be some time between each letter in or out, I'm happy to make regular payments (weekly or fortnightly for example) rather than in a lump sum at the end.
This is only a small project at this stage, since I've been winding down in preperation for my absense. However, it it works out, when I return in August I will need a similar task performed much more regularly.
Essential Criteria
Must have a good quality laser printer.
Must have access to a scanner.
Preferable
Located local to Enfield, 2136, so I can easily provide the hard copy files needed and the incoming mail.
