Whilst I've not done too many P2Vs with Hyper-V, I have had plenty of experience doing the same within ESXi, and I imagine that the process is roughly the same. Is the new host a new physical piece of hardware within the same physical environment as the old physical SBS 2003 server? Nothing is in Azure, correct? With regards to your new servers, are you looking to get one to be setup as a DC (nothing else), and the other to be an RDS server (terminal server)? Do you have a plan for migrating services like Exchange and Sharepoint, or do you already have an Office 365 environment? In any case, it sounds like an exciting project, and I'd be happy to help!
