I already have a similar script working on an environment of mine. A CRON job runs every week with a script that backup all Databases then it backup all files of the server using a tar archive (compacted). [the server must have space to store temporarily this file (you can choose the directories in the file system you don't want to backup). After that, the script ftp to the backup server, creates a new directory and transfer the database backup files and the server backup file. It's possible to have no temporarily file, and transfer files individually to the ftp server, but I would need one more day to implement it. Another CRON job will run daily and backup only the specified table in that database and transfer the backup via FTP.
