Craft Beer Boutique needs a new logo

Welcome to Sweet Amber - Beer Boutique, soon to be South Australia's first dedicated craft beer bottleshop. We have an existing business logo which has been roughly thrown together in Photoshop. While we're happy with the concept, we'd like a talented designer to polish the edges a little, and offer a few variations. The Brief: Using the current logo as a guide (.psd file attached), the new design will make better use of fonts, colour and style. The new logo must include the same text. We would also like the hop to remain the same, or similar. Some examples of what we'd like are; the 'Adelaide Central Market' text to be negative space (background colour black/white, or maybe on a scroll), the hop to be an 'amber colour'. Please provide an initial draft copy for one round of minor alterations that may need to be made. Any additional alterations that we request will be paid on top of the project budget. We would like you to produce 2 variations of the final design, a round logo and a square or rectangle logo. Of each of these two designs, we'd also like two variations, white on black background and black on white background. e.g. round white on black, round black on white, square white on black, square black on white. We require the finished design to be vector based and scalable. We also require access to all font files used in the design. Please provide the finished designs in EPS and JPEG formats.
