I'd love to design the UI for your game. Based on the video and your description, you are looking for a Console Based Text UI. The core of the UI would be an array of chars with some other data to handle the size and coloring. The class would contain methods to properly communicate with the other classes to update the UI and display an updated version when needed. I prefer to approach design in modular way, so that the functionality of the UI is not dependent on the other classes, resulting in clean and error free code. Please contact me if your interested.
