Convert a Template to a Website + ecommerce setup

I'm looking for an assistant developer on my small catering website. I have built most of the structure already, but need someone to reduce the workload on the main features of the site. I need 4 mockups converting to the site in a page builder which is already installed. I also need the BUFFET BUILDER function setting up which is my main ecommerce. There will be categories and tags. The flow is attached.
I will be building the rest of the site while you work
Buffet Builder
User will build own buffet from our “shop” product options. Add selected products with ajaxfly to cart.
Number of guests is initial option. Without selecting this, user will not be able to go further. The higher the quantity, the less the unit price is. I have price structure.
No add to cart button but instead: Add to Buffet
Each time a product is added to buffet, screen returns to product list in same category
very visible, BACK TO MAIN CATEGORIES and VIEW MY BUFFET buttons/links

PRODUCTS
Classification
Each product will have main categories, sub-categories and tags.
Main categories will be dish type eg fingerfood/buffet main dish/soup/fingerfood dessert/main dessert and each category will have the same sub-cats
Sub Categories will be dietary classification
Tags will be cuisine type e.g Italian/Indian/Welsh to link with recipes and blog
Product options
individual products
individual products will have quantity variable and price differences in the form of more discount the higher the quantity.
Option for bio-organic +50%cost
many products will have option to change product to vegan/gluten free/ other allergy-diet(text box for notes)
Total catering order/set menu product/quote form
options for equipment hire (separate product set)
options for waiter services(separate product set)
This is my own venture, not for another end-client. I do however have more work from fresh clients waiting once this site is done. I will provide the awarded freelancer with this work in exchange for helping me out here.
